Nana-Cashew Mash With Coconut-Vanilla-Quinoa Porridge And Mango
for the nana-cashew mash:
1 large banana
1 tbsp cashew butter (or peanut butter)
for the quinoa:
3/4 cup coconut water
4-5 tbsp quinoa
1 tsp vanilla extract
1 tbsp shredded coconut
1 tbsp stevia sugar
some crushed cashews
1. for the nana mash mash up the banana in a small bowl, add the nut butter and stir well. add into a glass.
2. for the porridge, in a small saucepan bring the coconut water to a boil, add the quinoa, vanilla extract, shredded coconut and stevia sugar and cook on low-medium heat for 10-15 minutes.
3. take off the heat and add on top of the nana-mash.
4. cut some mango into slices and add on top of the porridge. also sprinkle some crushed cashews on top.
